Jambalaya Dutch Oven Recipe
Ingredients:
1 lb hot link sausage or kelbasa sausage
1 chopped onion
1 cup chopped parsley
4 cloves chopped garlic
1 15oz can petite diced tomatoes
1 tsp thyme
1/2 tsp salt
2 cups dry instant rice
2 cups water
1 lb frozen peeled shrimp

Instructions:
Heat dutch oven with coals only underneath.
Cut sausage into 1/2 inch pieces.
Fry sausage and onions in dutch oven until onions are clear.
Add garlic and parsley. Cook until parsley is soft.
Add tomatoes, thyme, salt, water, and rice.
Bring to a boil and stir in shrimp.
Place dutch oven on top of 4 or 5 briquettes (low heat) and place 10 briquettes on lid.
Simmer until rice is tender and shrimp are pink - about 15 minutes.
Serves 4.

All recipes use a 12-inch dutch oven, unless specified.
If you have a 10-inch dutch oven, use about 2/3 to 3/4 of the ingredient amounts but keep the temperature and time about the same.
If you have an 8-inch dutch oven, use about 1/2 of the ingredient amounts but keep the temperature and time about the same.
If no temperature is listed, use 350 degrees.

This was a fantastic recipe!
I'm not a fan of dutch oven recipes that involve throwing a bunch of canned ingredients into a pot and cooking, so I spent time finding something using lots of fresh ingredients I could prepare ahead of time.
My friends and I have been camping for a long time, and this weekend I took my new 12qt Lodge oven and tripod out for its maiden voyage. We're all used to corn on the cob, potatoes and onions and grilled steak over a wood fire, but this time I brought it up a notch with the jambalaya. Replaced some of the water with light beer (no hops), and added a little cayenne pepper.
It was unanimous: my new camping nickname is Cookie.

@Jon - Oops, I mean 'Cookie'. It's always interesting to modify
recipes a bit, I think. I like stuff more spicey, so I'd give a
thumbs up to the cayenne pepper.

It was a huge hit and everyone is asking me to make it again
this year. I did add some Cajun seasoning for a little kick.
Feb 26, 2017 - v322Jambalaya without the Trinity? In Cajun cooking, the Trinity is onion, bell pepper, and celery. Add some chopped bell pepper and celery with the onion for more flavor. Also, you can use chicken stock instead of water for even more flavor.
